How would this work in terms of mana cost and duration? (I'd suggest a hefty mana drain over time, with it lasting until you can't pay the upkeep.)

Would converted monsters be able to "come with" when you change rooms (so you can have a pet anything, as long as you can pay the upkeep)? It wearing off sounds more like a hypnosis than a full conversion; maybe have a version that gives you a permanent ally (until it dies) but lowers your mana cap by a set amount, essentially making it so you can have minions of any enemy in the game.

Would bosses and minibosses be immune? (Inclined towards yes, since otherwise it could be silly - trashing the overlord room by turning the overlord against all his lieutenants would be a bit wrong. Funny, but wrong and gamebreaking.)

To accomplish this spell in a good way you would need:

An indicator that an enemy is on your side. Something the player can notice and easily see.

A duration of the effect. Perhaps repeated castings can increase duration up to a certain limit with some enemies being resistant with reduced duration, or immune altogether.

Miniboss and boss type monsters need to fall into the immune category as BenMiff suggests.

Optional: An indicator telling you the player when the duration will run out.

Finally I don't think the player needs permanent pets as that takes out much of the danger of play.
